With over fifteen years experience working in the industry, Gail has gained his experience working for Michelin star chefs Jacques Chibois “La Bastide Saint Antoine” 2*, Michel Del Burgo “Taillevant” 3*, Alain Llorca “Negresco” 2* and Émile Jung “Le Crocrodile” 3*. He also qualified as a finalist in the World Chocolate Masters France and participated in the prestigious “Meilleurs Ouvriers de France” competition (Best Craftsmen in France).
